羊蹄山から吹いてくる四季折々の風があって山麓から湧きでる水があって、季節の食材がある。
真狩村は料理人にとって「夢の場所」のひとつです。

こんな場所で私たち料理人の現在の到達点を精一杯表現したい。わがままな願いや村の素敵な人たちのご協力を得て、レストラン・マッカリーナとなって実現しました。

少しでもおいしいものを創りたい。
食べていただきたい。
味わいたい。そんな志を感じあえる人たちを私たちは同朋だと考えています。
同じ志を感じあえる人たちの豪華ではないけれど、
心暖まるひとときのなごやかさ。同じ風を感じながら、至福のひとときをお過ごしいただければなによりです。

The Village of Makkari is an ideal location for our work due to the water which flows from an underground source and the seasonal good-quality agricultural products.
Our ambition to represent on the plates what we have attained was realized with the great cooperation of local people.

雪の降る真狩村にグラフィックデザイナーの田中一光さんに来ていただきました。ちらちら降る雪の中で長靴をはいていただき、羊蹄山を見ながら、伏流水が湧き出、野菜の豊富な真狩村で私たちが作りたいオーベルジュへの夢をお話ししました。

田中さんに建築家の内藤廣さんを紹介していただき、そこからマッカリーナ・プロジェクトの幕が切って落とされたのです。レストランの存在が自然であること、真価は運営する人たちが創り出さねばならないこと。内藤さんから私たちに問いかけられたのは、そんなことでした。

田中一光さん、内藤廣さん、そのほか多くの人たちの想いを胸にマッカリーナがオープンして、もう28年がたちました。

Having a dream to build an aurberge in Makkari , we invited Mr.Ikkou Tanaka, a graphic designer in the snowy village. Standing in his snow boots, he intently listened to our plans of opening a restaurant in this village where good underground water naturally flows out and abundant local agricultural products are always available.

Mr. Tanaka introduced Hiroshi Naito, an architect, with whom our dream plans started to be crystallized. Mr. Naito suggested that the building of the restaurant should be integrated well in the surroundings, and that it’s not the building itself but the people operating the restaurant that can give true value to the restaurant. It’s quite moving to look back at that time twenty eight years ago with special thanks to everyone who has lent a hand to the success of the auberge.
